Always liked "Team Rice vs Sanders" a few years ago...much better than AFC vs NFC old routine.

 

Create your all-NFL team to compete against another all-NFL team. Assume you have the first pick on all STARTERS, with random backups of depth player quality to apply. In other words, not fair to pick the top 10 OL in the game as starter and backup, leaving the other team with the bottom of the barrel to pick from.
